To celebrate the release of SPECTRE, the 24th James Bond adventure, Champagne Bollinger has launched a new, limited edition bottle, inspired by the style and sophistication of the world of Bond. The SPECTRE limited edition contains a unique Bollinger cuvee, a 2009 vintage exclusively released to celebrate the partnership. The blend is composed of 68% Pinot Noir and 32% Chardonnay, sourced exclusively from Grands crus from the Champagne region: Aÿ 39% and Verzenay 29% (for Pinot Noir) and Mesnil-sur-Oger 16%, Avize 8% and Cramant 8% (for Chardonnay). 

The wine is fermented in small old oak barrels and sees approximately 6 years on the lees. The second fermentation takes place under cork rather than crown cap, to preserve the freshness of the wine. The dosage is approximately 7g/L. The vintage boasts a refined complexity, the expression of the Grands crus’ terroirs, with aromas of white flowers, citrus fruit, delicately stewed pear with hints of vanilla, toasted aromas, hazelnut and breadcrumbs. The wine shows a good maturity yet remains quite brisk and lively, with layers of candied fruit, Mirabelle plum, quince paste and honey, and a finish that recalls bitter orange.
