Cabernet Sauvignon

South Australia
The Heartland Cabernet Sauvignon is a rich, textural wine, with savory, fine-grain tannins and fresh acidity.  The fruit is crushed into 10 ton open fermenters, and left on skins to cold macerate for three days. Maximum fermentation temperature of 78 degrees Fahrenheit ensures enough tannin extraction while maintaining freshness of aromatics. The wine is pressed to oak for malolactic fermentation, then racked and returned to French and American oak for a 12 month maturation.
The Heartland Cabernet Sauvignon is a vibrant ruby in color. Wonderfully fragrant, with a lifted nose of black cherries, mulberries and plums, complemented by spicy oak characters of tobacco and vanilla. The palate displays plummy, blackcurrant jam notes with a hint of mocha. Medium bodied, this wine can age gracefully for 5 years.
