When We Dance, Chianti
The latest release from Sting's Il Palagio winery in Tuscany, When We Dance is a fresh, young Chianti that positively exudes charm, violets and bright red cherry fruit. Like all the Il Palagio wines, it is biodynamically farmed and developed by the world-class viticulturist Alan York in conjunction with Italian enologist Paolo Caciorgna. The vineyards are based in the area of Figline Valdarno in the Firenze district, are guyot-trained, and have soils that are rich in sand and magnesium. When We Dance is a blend of Sangiovese, Canaiolo and Colorino, and is fermented and raised entirely in stainless steel.
Vinification: Fermentation in stainless steel
Maceration: 2 days at 10 degrees Celcius, 5 days at 28-30 degrees Celcius
Aging: 6 months in stainless steel
Production: 3,500 bottles
