Situated on the shadow of the mountains of La Paramera, not too far from Madrid, Cebreros is a historic vineyard with 60-80 year old plantings. Almost forgotten today, the area captured Telmo’s imagination as he valued its unique terroir. Vineyard elevations (2100-3000 feet), the bush vines of Garnacha pruned in the fashion of the 19th century, and the people who work with difficulty the ravines of pure slate make a vineyard of tremendous potential.

The vineyard on Cebreros has a particular microclimate with only a few acres of vines. They are ruled by a particular wind that tempers the hard climate of Avila, delaying maturation and protecting the vines from illnesses. Pegaso is a wine grown from 12 acres of vineyards, all of them in the schist slopes of Cebreros. The slate ripens the Garnacha until it achieves an unusual deepness. The wine is aged for 15 months in French Oak barrels of 500 and 225 litres.
The wine is vinified by native yeasts in large wooden casks, and then aged in seasoned French barrels for 24-30 months. Fewer than 400 cases were made.-
