Bollinger’s flagship NV Champagne is in a category of its own, no doubt a result of the almost unthinkable level of labor-intensive practices that go into making this blend.

Voss’ comments reinforce Bollinger’s commitment to craftsmanship. He says, “dominated, as always, by Pinot Noir and with wood fermentation and aging, this Champagne has a great poise between freshness and richness.
